Banana Bread

From simplyrecipes.com, this one appears to be superior to our previous banana bread efforts.

2-3 very ripe bananas
1/3 cup melted butter
1 cup white sugar
1 egg, beaten
1tsp vanilla extract
1tsp baking soda
pinch of salt
1.5 cups plain flour (we used about 1/3 cup self-raising flour and the rest plain)

Preheat oven to 175C. Butter/grease a 4×8 inch loaf pan.
Mash bananas with a fork until smooth. Stir in melted butter, then mix in the baking soda and salt. Stir in sugar, egg, vanilla. Mix in flour.
Pour into pan and cook for about an hour, or until an inserted skewer comes out clean.
Remove from oven and cool completely on a rack before taking out of the pan (though we ignored this advice and removed it from the pan after a few minutes).
